I love France.
I hope you have enjoyed this weeks posts... Tomorrow there will be a little French fashion to finish the weekend, and today a flavorful recipe to make it a nice Friday.

French Week: Food & Home: Recipe: Potato Leek Asparagus Soup

A delicious Vegetarian French Soup: Potato Leek Asparagus

I have always loved this soup, but never tried to make it at home... until now. Surprisingly it was so easy and maybe the best soup I've ever made... for real.

Ingredients:
Leeks
Onion
Quartered Potatoes
Asparagus
Cream
sour cream
1 cup water
3 cups Chicken broth
butter
garlic salt
salt
pepper
dill



Directions:
1. chop a small mild onion put in pot with tablespoon of butter
2. throw in chopped leeks
3. add salt, pepper & dill
cook maybe 5-10 minutes

4.throw in chopped potatoes & add 1 cup water, 2 cups chicken stock
5. let boil for about 10-15 minutes until potatoes are soft
6. add cut asparagus and cream and 1 more cup chicken stock
7. let simmer 15 minutes or so
8. add 2-4 tablespoons of sour cream (to taste)
9. Sprinkle more dill for nice finishing touch.

You can let this simmer for a while on very low if you want to keep it on the stove for a bit. As potatoes break down the soup will become thicker, you can add more chicken stock if you need more liquid. You can also run a cup of the soup through a blender and put back in the pot if you'd like a more concentrated texture once you are finished. Add garlic salt for more flavor.
(You could use fresh garlic, but I am very sensitive to it, so I opted for garlic salt.)

Sorry this recipe is a little rough in measurement. I'm trying to get better at measuring... when I cook it's kind of like a science experiment. But with this soup, you really can't go too wrong, if everything is cooked you can always add more stock or cream to your own taste...

And one more tip... If you don't have fresh leeks it works just fine with frozen! I tried it out with Trader Joe's frozen leeks... couldn't tell the difference!

Today's list: Pet Peeves
In no particular order...

1. when people don't put pictures of their spouse on facebook.

2. public restrooms that you have to turn the door handle to get out of...
I just washed my hands, why would I want to touch the door handle?

3. baby religion

4. unsolicited opinionated experts

5. after purchasing an Apple product and finding out the newer, better version with a USB port and G4 networking is now available.

6. posted photographs with no source!!

7. when the ladies at Zumba try to box you out of your space.
(if you've been to this class... you know what I'm talking about, they are aggressive at the Siskey YMCA)

8. overuse of the word organic.

9. people who think the way they gave birth is the only way to go...

10. the squeaky feeling of glasses out of the dishwasher

10.5 The word "peeve"- it's so gross sounding! :)

What I wore...
for Lauren.

This is my favorite "going out" outfit, for those few times I do go anywhere (on an evening to somewhere cool) these days. But you know what, it's winter, I'm sleepy & cozy on Friday nights and don't mind staying in for a few months. Is that terrible?
my husband would say yes.


A friend of mine told me I should do a "what I wore" post, but honestly, these days (post baby) it all comes from generally the same places. I never thought anyone would ever be interested in knowing what I wore, but who knew...

btw, I still wear my bella band for all kinds of undergarment issues and wish I would have known about it pre-pregnancy, seriously I love this thing...

Necklace: Vintage piece from my Heirloom Etsy store... however like most my items, I just can't bare to sell it yet so I'm wearing it instead... I need to get my act together and stop wearing all my merchandise and getting attached to it.
that's why my store is so sparse

My apartment-mate in college used to have this fantastic sweater with a gold sequined star on the front. And in those days I used to sing in a band every weekend... One night we had a show and I didn't have anything to wear and my roomie was out of town... Faith, I'm just now admitting this publicly I hope you will forgive me, and I put on her glistening star top and sang my heart out, and then slipped it back into her closet airing out the smoke smell before she returned...
But man, did I feel cute in that glittery shirt.

So today I'm inspired by:

I don't really like eggs at all. Well, ok I like them a few ways (in a chocolate cake) but I never think- "I'd really like to eat some eggs today." However, my husband eats them regularly and sometimes when he's banging around in the kitchen I look over his shoulder and think "that's not a bad idea." So here's my healthy vegetarian lunch that's not a salad, inspired by my husband's daily omelets.

Chop some vegetables of your choice: broccoli, spinach, mushrooms, red peppers and carrots.


Find a vegetable burger of some kind. (for this I like the vegetable marsala burgers from TJ's because the indian spice & potatoes give it a substantial flavor and filling) Toast the burger until golden & ready.


Now this is completely unorthodox... just the way I like to do it since I'm not an egg eater. I crack an egg on the bottom.


Throw the veggies and chopped up veggie burger in with a little sprinkle of cheese.


crack an egg on top. Salt, Pepper and scramble.


The reason I like to do it this way is because when you scramble eggs and then add the veggies, the egg becomes the main ingredient, but in this, it's like the egg serves as an equal component in the dish.

Cook until eggs are fluffy but solid.


Viola!

Garnish with Sour Cream, Cilantro and Salsa Verde (or tomatillos).


And for the Southern girl, add a little texas pete.


Easy, quick and pretty good for you.

So in case you haven't noticed, I've picked up blogging speed. So I thought, like any good relationship, I would make my blog intentions clear.

I'm ready to take things to the next level of commitment with you.

I'm going to blog every weekday. There will be inspiration daily during the week, and then bonus weekend posts when life allows.

Got it?

So you can make me part of your normal routine...

Get a cup of coffee or tea, settle into your morning chair, turn on the computer, check your facebook & email and then come over for a little designer life catalyst. Then become so inspired that the rest of your day is filled with ideas and color.

Ok?

So every weekday and sometimes weekends, unless there is a glitch in the system, I'll be right here.

MONDAY

So today, being Monday, and as I've already discussed sometimes my favorite day, I'm going to do something else that I love that is so Monday-ish.

Make a List!

So today's list for the week...


Things you should do just because.

1. Write someone a letter or card and mail it.
telling them how wonderful they are or thankful you are for them.

2. Forgive Someone.
This is something I am currently working on.

3. Try to listen more than speak.
Not good at this... that's why it's on the list "should do"

4. Say something kind to a stranger.
this will require getting out of the house
you would be shocked how many days i remained indoors during the snow last week.

5. Go to bed early.



Is my list a little too soft for you this week? That's ok, next Monday it's Pet Peeves.

Ok, so I am really trying to stay with my "embracing winter" attitude I've got going on here... but it's getting harder when I could barely get into my car because of all the ice built around it. (and I had a baby on my hip, groceries in my hand and a slippery mound to climb to get into warmth)

However, staying true to my theme, here's another tribute to the cold, to remember the beauty and hush of winter. These pictures do make me feel a little more contemplative.

Today I'm inspired by, babies.

I know there are a lot of people who think they aren't a "baby" person. I understand most people don't want to get caught in conversations about breast-feeding and potty training or want to hold someone else's baby, however you've got to admit- there's nothing in life cuter than a good ol' chubby baby! I'm mean just look at these faces... I can't get over that little babushka!


And the little lion tamer there is wearing a cee-ute hat made by sweetpeatoadtots on Etsy. Please go check their site if you want to see more adorable baby hats - the little babies are so cute it's worth the peek. I discovered them through blog friend: Serendipity & Spark, who by the way always finds the cutest stuff.
