Food & Home: Summer Salsa re-vamp

Sometimes when I'm hungry and it's hot, I experiment with what I've got laying around to make a snack. actually this happens all the time- sometimes not so great. So this day I wanted a summer salsa and used the ingredients I had around to make it. I have lots of mint growing in the back yard and I love mint in everything, so I decided to see what would happen if I threw it into a bean salsa. It was great! So here's my concoction. Of course some other lovely additions if I had them around would have been mango & cucumbers.

Just chop and mix. Easy Peasy.
Recipe:
Black beans
fresh corn
(just a little) olive oil
lime juice (if lime is fleshy- like mine was, carve out flesh into bowl)
avocado
tomato
mint
cilantro
