Soft boiled egg & Mustard Green Salad with shaved crispy potatoes and dijon yogurt vinaigrette

I was at the farmer's market looking through the leafy bunches, when the mustard greens caught my attention. I don't know if I've ever made a salad using them, so I tasted them raw and came up with a nice compliment for the flavor... this salad, which was dynamite, and would be delicious with a piece of grilled salmon. next time
Mustard Yogurt Vinaigrette: (I make all things to taste, so here are the rough measurements)
a little honey (1/2 tbs), greek yogurt (2 tbs.), dill, mustard, salt pepper, olive oil and white balsamic vinegar. Shake & Stir.
Salad:
chopped mustard greens, julian carrots and crispy shaved purple, red & white potatoes that I sliced with a mandolin and baked at 350 degree tossed in olive oil and dill until crispy.
*served with soft boiled eggs and sweet sourdough toast.

- Bring a pot of water to a boil.
- Place eggs in pot of boiling water. a slotted spoon works well.
- Boil for 6 minutes. Everyone is different in how they like their soft boiled eggs, but 6 minutes gives it a hard white texture with a thick runny yolk.
- When time is up bring the pot to the sink and immediately run cold water over them.This will stop the cooking but will *not make the inside of the egg cold.
- Crack & Peel your egg & enjoy!
the perfect soft boiled egg
I've always loved poached eggs, fluffy and creamy, especially with hollandaise. So I decided one day to give myself a chance to do it. There were a few terribly gross mishaps... if you've never tried to poach and egg, if it doesn't work out, it can look like a rather disturbing mess.
I researched before my egg performance and decided to go with Smitten Kitchen's method. I served this over a gruyere encrusted black bean cake with wilted kale, fresh sliced avocados and tomatoes and Sriracha always.
The black bean cake was made with shaved sweet potatoes, egg, bread crumbs, mashed black beans, and fresh herbs, poured over a bed of melting cheese in a hot oiled pan. I'll have to perfect this recipe before I share it... as usual it was a quick experiment. Often when I want to make something, I just google or look up my favorite food sites for recipes and combine and play until something works enough to keep doing it.
Hey, I poached an egg!
Do you ever just get a craving for something and you don't know where to get it? When I was in Connecticut shooting this fall, the chef from the weekend made the most simple, delicious peanut noodle salad. I could have eaten the whole bowl if I wasn't working. So I thought, I bet I could make that at home! I researched recipes and came across Smitten Kitchen's recipe and used a moderation of the peanut sauce and then added my own ingredients that I already had. Which was sliced baby carrots, crushed peanuts and mache. Maybe next time I'd go with some pea shoots or some crunchy thai cabbage to throw in there. I used linguini noodles because that's what I had the first time- and I like thicker noodles.

Peanut Noodle Salad
Are you ready for the easiest dinner ever? And it costs about $6-8 for everything including toppings. And serves 4 adults.
Take Trader Joes (or equivalent) canned vegan organic chili, pour in bottom of a baking dish. Mix your favorite cornbread mix. I like the good old 50 cent Martha blue box you can find at most grocery stores. Pour mixture on top... bake as cornbread directs. Serve with sliced avocado, salad greens and dollop of greek yogurt. So far- almost vegan (egg in the cornbread & dairy in the yogurt).
cheap, healthy dinner in a hurry!
I was in a hurry... I needed to make something for Christmas and the experimenter in me won't allow just a plain cake. So this is what I whipped up.
cake
cake mix + can of sprite (bake as usual) oh and I ran out of eggs so this was bravely made with only 2 eggs- it would probably fluffy and delish with the proper egg
salty brown sugar filling
butter, salt, whole milk, brown sugar
whisk on stove until bubbly and carmel color (might need to sit a bit to thicken)
whipped cream
whip you some heavy cream (no sugar)
bake cake, slice center ( an old trick I learned was using fishing line- slices right through that sucker easy)
pour brown sugar carmel on bottom layer (let cool down a minute)
heap whipped cream on top (as much as you'd like)
layer the top, dust with powder sugar and pretty things.

On New Years Day I had some leftover champagne that I didn't particularly care for. After a few mimosas I decided to slow roast some beef and carrots and make a champagne stew. It was so delicious.
Here's the loose directions:
Brown beef in butter or olive oil, salt & pepper and any other seasonings, ( I think this was bottom round) until all sides are browned and have a nice little edge. This was kind of thrown together so the method wasn't thought out... but so good. I didn't have onions so I used some garlic powder, a bullion cube and some water, carrots and fresh herbs. I cooked half the carrots and beef for hours covered in the oven, checking every once in a while and adding a little champagne and more water if needed. *water only if you use the bullion cube... otherwise you need stock. remember this is so make-shift using what I had.
I took the cooked carrots out and did a little blend in the food processor with a ton of fresh italian leaf flat parsley- totally experimenting and then poured it back into the pot with more uncooked carrots and champagne. I cooked longer until the meat was perfectly tender and carrots cooked. I added more champagne, fresh parsley and served with a dollop of sour cream on top....
With this kind of stew, you can cook it for a long time and the meat just gets more tender. So it's hard to mess up- unless you don't have liquid in the pot... and, as I do with most my cooking- just keep adding alcohol for a rich flavor... if you add too much just a cook it a little and it will quickly lessen it's intense flavor. Also, creme fraiche or sour cream is such a compliment to any stew.
Champagne Beef & Carrot Stew
So I've tried to make myself like Spaghetti Squash for years, but every season I make it and try to enjoy it- and can't finish a plate. But I decided to give it another try- this time experimenting with stronger flavors so it's not just squash with tomato sauce on it. This is the most simple, delicious meal I've made this year. And it's so good... I think about eating it often.
Ingredients:
Spaghetti Squash
whole lemon
parmesan or other hard cheese
salt, pepper
olive oil
flat leaf parsley and/or fresh basil
brussels sprouts
olive oil
fresh garlic
Directions:
Halve the squash, scrape out seeds, oil the cut sides lightly, sprinkle with salt and pepper and roast with the cut sides up at 400 degrees for 40-50 minutes or until tender when pierced with a fork.
When it's ready, let it cool down a minute and scrape out squash filling. Should scrape easily and look like noodles!
Place the "noodles" in a bowl and mix in (to taste) half or whole fresh squeezed lemon, lots of grated parmesan (or similar) cheese, olive oil, salt, pepper and a rough chop of Italian flat leaf parsley and/ or fresh basil.
I served mine with pan seared brussels sprouts... which was delish.
You can halve the brussels sprouts so the edges get a little crispy.
Heat olive oil in a pan with some fresh chopped garlic. (even I ate it with garlic, which I never do) add in brussels sprouts, toss in garlic oil cook until tender and edges may golden, sprinkle with salt and pepper.
AND IF YOU WANNA GET CRAZY, add some crispy pancetta. :)
Lemon Parmesan Spaghetti Squash with Pan Seared Brussel Sprouts
Easy, quick fix to a late night sweet craving, that's not too bad for you. :) Here's a loose recipe. Enjoy!
Cut nectarines or similar fruit in half and arrange them cut-side up in a baking dish or pan. Sprinkle with butter and brown sugar and thyme if you have it and roast them at 375 until they are slightly bubbly and juicing all over the pan.
For the cream: I have now tried several renditions. For a low fat option omit the butter and sugar in the roasting and use ricotta cheese with a light stir of maple syrup and a dash of cinnamon- great light dish.
Or mix marscapone cream with about a tablespoon or two of creme fraiche sprinkle in some cinnamon, nutmeg and either brown sugar or maple syrup to taste.

This was a healthy dinner that turned into a healthy lunch. I modified an epicurious recipe and I didn't miss the extra calories at all. And it was the easiest in the world and took 30 minutes tops to cook.
Preheat oven to 425
Sauce:
Greek Yogurt, Dill, Dijon Mustard, Honey Dijon Mustard
*I liked adding a little honey mustard to make slightly sweet.
Mix until flavors taste the way you'd like them.
Fish & Potatoes:
Place the salmon (skin down) on an oiled glass baking dish. Place the potatoes flat around the salmon (so that no potato is overlapping)
Cover the top of the salmon with yogurt mixture. Sprinkle with dill and salt.
Cook for about 20-30 minutes depending on thickness of fish. Both should be done together- and your dinner is ready!
Seen above served with fresh mixed greens, fresh dill, and extra yogurt mustard sauce for dipping.

Mustard & Dill Yogurt Baked Salmon
Molasses Pork: A cut of pork, molasses, ketchup, seasonings, salt & pepper, a splash of apple cider vinegar, hot sauce... in a crock pot for 5 hours on low... or all day BUT beware it can burn if there's not enough liquid because of the sugar content of the molasses... add some chicken stock in the beginning to prevent this...
Greens: cooked greens in a pot with olive oil, a little onion, splash of apple cider vinegar, salt & pepper in chicken stock... until just right. not too long- you don't want mushy greens!
This meal is so good, sometimes we have cheddar grits or polenta with it.
